1. Choctal chocolate and vanilla ice creams are the only ice creams on the market that highlight the differences of vanilla and cacao grown in the different regional rain forests of the world. The chocolates are intense, distinct, with robust fully rounded flavors and are often compared to premium chocolate bars. The vanillas in the opinion of many surpass the chocolates with surprising differences. Hundreds have commented, a few seconds after telling us that they were not vanilla fans, that the Madagascar Vanilla "was our best chocolate."

2. Choctal uses TWO & HALF to THREE TIMES more cocoa/chocolate in our ice creams than other national manufactures, that we are aware of. As a matter of fact, we use so much cocoa in our ice cream; that the first time our dairy ran our base recipe, we broke their pasteurizing equipment! Needless to say, that was the first and last time the dairy ran that recipe. To insure the integrity of our product, we've added a process that no other manufacture of ice cream incorporates, that we are aware of. This step adds three hours to each production run! But this extra step allows Choctal to add considerably more cocoa/chocolate into our base mix; thus creating, ultra rich, superbly creamy, chocolate ice cream and each of our chocolates profiles are made exactly the same way, the only difference, where the cocoa/chocolate (cacao) comes from.

3. Choctal uses only PURE 100% DOUBLE FOLD VANILLA EXTRACT, extracted from vanilla beans grown in numerous regional rain forests of the world, in our ice creams. That means; our vanilla extracts are twice as potent as the vanilla you buy at the your local store. We buy directly from farmers whenever possible and our Costa Rican Vanilla profile is the only vanilla in the world certified by the Rain Forest Alliance, www.rainforest-alliance.org. 5. Lower Sugar Content - Our ice creams have less sugar than competitive super premium brands, which allows the natural, native flavors of the different chocolates and vanillas to prevail without the
sweet masking influences of sugar.

6. Less Air - In the industry it's called OVER RUN. Some ice creams in your freezer case have a 60-80%
over run. More air/ less weight. More weight / less air. Choctal's high density provides a more filling,
satisfying, and luxurious experience.

7. Egg Free - High Butter Fat Content - Provides a super-creamy, smooth taste sensation.

8. Expensive- NO... Based on weight, quality of ingredients; pure 100% double fold vanilla, two
to three times the amount of chocolate or vanilla in each pint than many brands out there. Choctal

Serving Suggestion

Great Ice cream like fine wine, should to be served at the right temperature. We suggest taking your
ice cream out of the freezer 15 to 20 minutes before consumption (45 to 50 minutes if on dry ice) Let
stand till you can feel the softening as you lightly squeeze the side of the container.

Choctal Chocolate ice cream profiles were designed to go with your favorite Port's & Madeira's and
the Vanilla profiles served with a Late Harvest Riesling, an Ice Wine from the German Rheingau or
Sauternes from France's famed Bordeaux region will have your taste buds dancing in delight. You'll

Choctal's name is a derivative of xocolatl the Mayan/Natal word for cacao/chocolate and Tikal the
former major Mayan metropolis, located in present day Guatemala. To be true to the 3,000-year-old
Meso-American origins of cacao, chocolate and vanilla, the company had a Mayan scholar create a
hieroglyph, which reads "Choctal" prominently featured on packaging just in case you're a time traveler
& read hieroglyphics.
