Chocolate
made with high percentage
cacao is loaded with antioxidants,
natural mood enhancers
and is good for you!
Good
chocolate, like fine wine
and good coffee, tastes
different. The flavor
profiles
are based primarily on
the varietals of the cacao,
(Criollo, Forastero,
or
Trinitario), but more than
35 countries grow the cacao
from which
chocolate
is made, and each growing
region produces cacao beans
with
subtle
flavor nuances. Additionally,
as with coffee beans and
grapes, flavor is
affected
by harvesting and fermentation
methods. Drying cacao beans
and
coffee
beans can be accomplished
different ways and this
too affects the
taste.
Even more flavor variations
bloom during the roasting
process.
There
are chocolate flavors most
of you have never experienced.
Choctal's
quest
is to find and bring to
our consumers, the most
delicious, robust,
essential
chocolate flavor profiles
the world has to offer.
After
extensive tasting, sampling,
and experimentation (poor
us!), with cocoa
powders,
chocolates, bars, truffles,
we've discovered that ice
cream is a
perfect
medium
for showing off different
flavor profiles of named
origin cocoa
powders.
And since vanilla has always
gone hand in hand with
chocolate, we
would
like to share what we've
learned about great vanilla
too. |
